The chia pudding. Hands down, my all time favourite breakfast. I have to stop myself ordering it when I'm out for breakfast since I eat it so much at home. I love the blank canvas of it, and the ease of it. It goes with any flavour at all, any topping. The texture allows you to add all sorts of different things to it, although some don't like the texture. I don't really understand that but we're all different!

Winter breakfasts can be challenging when you are not only gluten free but also intolerant to starches. So even gluten free grains are out. Yes that's right. No quinoa, no amaranth, no millet, sorghum. I have been in utter denial about buckwheat though. It's the one gluten free grain that I love however with the recent cold weather here in Melbourne I did have a week of buckwheat porridge for breakfast each day and felt the affects. Since I made this cheesecake a few weeks ago, I have not been allowed to make any other flavour. This conversation seems to have been on repeat ever since I made them. This is my favourite breakfast by far! 

I love the ease, the versatility, the goodness of a chia pudding. I’ve made it with water, with almond milk, with coconut milk, with freshly squeezed tangelo juice. I’ve flavoured it with vanilla, activated charcoal, crushed raspberries, mesquite powder, cacao, Butterfly Pea tea, turmeric, blue algae and peanut butter.
